Final Fantasy games usually go above my head. I tend to stick to coding games I already own, myself, so I'm familiar with how they work in practice and can test what I'm doing out myself.

It could be storing your EXP in a cumulative capacity, not resetting back to zero when you level up, although the game will show it differently.

I'm planning to do some Innocent codes when I've got more free time. Likely I'll do one to load a certain number of items with max Statisticians. Testing a code is different from simply posting it. If you're going to post a code, test it first to see if it works or if it's got some sort of bug. There is no point in posting untested codes, that's all.

Of note: Some game versions will have different IDs and are not all listed on GameFAQs.

Just look it up on GameFAQs or something. They list the IDs alongside the game release dates in one of the tabs for every game.
